Preheat oven to 300 degrees F (150 degrees C). Grease two 7x3 inch loaf pans with the extra butter from the bread (about 2 Tb).
Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon.
Mix in salt and baking soda. Continue mixing until well blended and smooth.
Slowly sift in flour. Stir until blended, be careful not to overmix.
Divide into prepared pans.
Sprinkle the pumpkin seeds (or your favorite nuts) evenly over the top of the bread. Lightly dust the remaining cinnamon, sugar mixture over the bread and nuts
