Ingredients
    Coating
  • 1/4 cup Granulated Sugar
  • 2 teaspoons Ground Cinnamon
  • 1-2 tablespoon Salted Butter (You may use the butter remaining from the stick used for the bread - You won't use all of it)

  • 6 tablespoons Salted Butter
  • 1 1/2 cup Granulated Sugar
  • 2 Eggs
  • 5-6 VERY Ripe Bananas (Mashed)
  • 1 cup Sour Cream
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Ground Cinnamon
  • 1/4 teaspoon Salt
  • 1 1/2 teaspoon Baking Soda
  • 2 1/4 cups Bread Flour
  • 1 cup Pumpkin Seeds (Or your favorite nuts - Optional)
Instructions
  1. Preheat oven to 300 degrees F (150 degrees C).  Grease two 7x3 inch loaf pans with the extra butter from the bread (about 2 Tb).

  2. In a small bowl, stir together 1/4 cup sugar and 2 teaspoons cinnamon. Dust pans lightly with cinnamon and sugar mixture. Save any extra and set aside.
  3. In a large bowl, cream butter and 1 1/2 cups sugar.
  4. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. 

  5. Mix in salt and baking soda.  Continue mixing until well blended and smooth.

  6. Slowly sift in flour.   Stir until blended, be careful not to overmix.

  7. Divide into prepared pans.

  8. Sprinkle the pumpkin seeds (or your favorite nuts) evenly over the top of the bread.  Lightly dust the remaining cinnamon, sugar mixture over the bread and nuts

  9. Bake for 1 hour, or until a toothpick inserted in center comes out clean. Remove loaves from pans immediately, and let cool on a wire rack for 30 minutes before serving.
