Ingredients
  • 2 pounds salmon (skinless filet(s))
  • 2 bunches asparagus (woody ends removed)
  • 2-3 jalapeños (chopped)
  • 3-6 serranos (chopped)
  • 5 green onions (minced)
  • 1/2 bunch cilantro (minced)
  • 1/4 cup parsley (chopped)
  • 1 head garlic (minced)
  • 2 lemons (freshly squeezed)
  • 2 tablespoons olive oil (I use the California Olive Ranch brand)
  • 1/2 cup butter (melted)
  • 1/4 cup chicken broth (low sodium)
  • 1-2 tablespoon crushed red pepper
  • 1 tablespoon granulated garlic
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic salt
  • 1/2 teaspoon cracked black pepper
  • 1/8 teaspoon cayenne powder
  • 1 pinch garlic powder
Instructions
  1. Heat oven to 400°F.  On a large rimmed baking sheet, place the salmon filet(s) down the center of the pan with the asparagus along the sides.

  3. In a small bowl, mix together the garlic, juice from lemons, olive oil, melted butter, chicken broth, and spices.

  4. Once well-blended, pour the mixture over the salmon and asparagus.  Cover just the salmon with the pepper mixture from step 2.

  5. Place in the oven, and cook for 20 minutes or until salmon is opaque throughout.
